I'm not a professional chef by any means, mostly a foody who has studied cooking like many men study golf, always trying to improve my game and eager for the next chance to play. Mutton pie, Scotch Pie, Lamb Pie, traditional fare from the UK, I will give simple instructions to make a quick pie or you can Google those to find one that suits you. Ground lamb is often available but tends to be a bit fatty so I have the butcher remove the fat from a small boneless half leg and grind it course for me. If you're not in a hurry it's even better to mince the lamb yourself. Pillsbury Pie crusts work great, I'm a good cook but I'm also a lazy one, if you haven't used them you can generally find them somewhere near the eggs. You might even try making the hot water crusts and making individual pies as per the "real" recipes.......
INGREDIENTS
1/2 pound ground lamb
One medium potato diced very fine
One medium onion diced very fine
1/4 cup Beef stock or gravy
Salt and pepper
Mix these together in a mixing bowl, add additional seasonings to your taste, a splash of Pickapeppa or Worcestershire sauce etc never hurts.
Place one pie crust in the pie pan, spread the meat mixture over it. put on the top crust and seal them together. Cut a few slits in the top to allow steam to escape. Bake at 375F for one hour.
